We tried out this Carrot Cake recipe using Lidl’s ingredients and it turned out perfect! Try it out this summer to impress family and friends
Ingredients from Lidl - makes one large layer cake
• 285g carrots, peeled and grated- 27p for 500g
• 225g unsalted butter
• 285g soft brown sugar
• 4 large eggs- 79p for 6
• 2 teaspoons ground cinnamon
• 340g Belbake plain flour- 45p for 1.5Kg
• 1 tablespoon Belbake vanilla extract- 89p
• 1 level tablespoon Belbake baking powder- 69p for 200g
• Grated zest and juice of 1 unwaxed lemon- 99p for 500g
• 225g finely ground almonds
For the icing:
• 250g cream cheese
• 110g Belbake icing sugar - 89p 1Kg
• Grated zest of 1 unwaxed orange- £1.19 for 1.5Kg
1.) Preheat the oven to 180°C
2.) Cover the bottom of two springform tins with baking paper and grease the inside rims with butter.
3.) In a bowl, whisk the butter and sugar together with vanilla extract until airy and fluffy. One by one add the eggs to the mixture and beat well between each addition.
4.) Sift the flour, cinnamon, a pinch of salt and baking powder on top of the butter mix then fold in until smooth. Stir in the carrots, lemon zest and the juice as well as the ground almonds.
5.) Pour batter into the tins and evenly smooth it with a knife. Bake for approximately 35 minutes. Insert a skewer into the center of the cake. If it comes out clean the cake is ready.
6.) Remove the cake from the oven and leave to cool completely
Put the cream cheese into a bowl and stir in the icing sugar until smooth. Add the orange zest to taste. Spread it over the top of the cake and refrigerate to set before serving.
